Monday, Monday

Today was a pretty smooth day.  Though I did have too many Honey Sesame Cashews (rats!)…I got a great workout in–both at home and at work–and came in under my Calorie limit.  I guess that’s all I can ask for, huh?

I made one of our favorites (with a twist) for dinner:

It’s a pretty typical Caprese Salad (Tomato, Basil, Mozzarella), but with Arugula mixed in.  That, and some Kalamata Olive Bread, made for a really tasty dinner.  And, since I made it myself, it wasn’t drowning in oil!

Monday, I won.  Let’s do Tuesday next!

  1. That salad looks delicious Beej! I didn’t have one Caprese Salad this year – my Basil was a bit too strong.
