Okay, so I know I haven’t been on here for a few days. And really, it wasn’t intentional. Don’t the days just get away from you?
Well, for a little update, I was able to log a nice quick run in this week; I made it into the gym 4 days so far. I’m really happy with how this week has shaped up! Frankly, I have no idea what my weight will show tomorrow, but this week has been a success in my book.
2 sticks unsalted butter
2 1/4 cups bread flour
1 teaspoon kosher salt
1 teaspoon baking soda
1/4 cup sugar
1 1/4 cups brown sugar
zest of 2 oranges
1 egg & 1 egg yolk
2 tablespoons milk
1 1/2 teaspoons vanilla extract
2 cups semisweet chocolate chips
Melt butter in pan on low. Mix the sugar, brown sugar and orange zest in a bowl and let sit. Sift the flour, salt, and baking soda into a bowl.
When the butter is melted, pour it into the mixing bowl (with paddle attachment) and cream with the sugar mixture. Then add the milk, eggs, and vanilla and mix until incorporated. Then add the flour mixture into the mixer in 3 rounds, waiting until the previous amount is mixed in. Finally, stir in the chocolate chips and place in refrigerator for 30-45 minutes.
Spoon out onto cookie sheet (lining it with parchment paper is helpful) and bake at 375º F for 12 minutes, turning around halfway.
