Caramelized Onion & Cheddar Frittata

Tonight was another long and great night!  Anna and I went to see In the Heights at teh 5th Avenue Theater in Seattle.  So fun!  One of the best musicals I’ve seen recently–and I’d heartily recommend it to anyone who likes musicals.

So yeah, no exercise today.  But I still promised a recipe.  And I hope Ish likes it!

Caramelized Onion & Cheddar Frittata
Makes 4 Servings

Ingredients:
2 tsp Olive Oil
1 large Onion
2 tbsp butter
2 tbsp balsamic vinegar
Fresh Ground Black Pepper
3 Large Eggs
2 cups Liquid Egg Whites
1/2 cup 2% Milk
1/2 cup Shredded Cheddar

Instructions:
Heat Olive Oil in oven-safe pan
Add sliced Onion and cook down until translucent
Add Butter, Balsamic Vinegar, and Pepper and cook until caramelized
Pour mixture of beaten Eggs, Egg Whites, Milk, and Cheddar into pan
Bake at 350 degrees for 35-40 minutes or until cooked through

    The fritata sounds great Beej. Unfortunately, I would be the only one to eat it in my house because of the onions.
